Ingredients - 4 servings
1 lb wild Icelandic haddock fillets
1½ cups all-purpose flour
1 cup of your favorite beer, preferably light
½ cup fine dry bread crumbs
½ cup finely chopped almonds
2 tps finely chopped thyme
2 tbsp extra virgin olive oil
1 lemon, cut in wedges
Directions
Step 1
Preheat oven 410°F and line a baking sheet with parchment paper.
Step 2
Cut the fish fillets into 1-inch-thick strips.
Step 3
Prepare 3 shallow plates. Place the flour in the first one, beer in the second one and combine breadcrumbs, almonds and thyme in the third.
Step 4
Dip fish into the flour, turning to coat, then dip into the beer and finally into the crumb mixture. Place on prepared baking sheet and drizzle with oil.
Step 5
Bake until golden brown, or about 12 minutes. Serve with lemon wedges.
