Icelandic Lemon Honey Arctic Char with a Citrus Sauce

This is a whole other take on sweet & sour. The fish is also sweet, which should be helpful information if you’re preparing it for your kids.

Ingredients
  • 4 small oranges
  • 1 lemon
  • 1 tbsp honey
  • 3 tbsp olive oil
  • 4 fillets of Icelandic Arctic char (6 oz)
  • 2 tbsp minced chives
  • 1 pinch flaky sea s
  • 1 tbsp neutral oil
Directions

Step 1
Preheat a broiler to high. Cut off the ends of the citrus fruit. Remove skin. Then remove each rind, or segment, of the fruit by peeling back the membrane that holds them together. Squeeze all liquid from both skin and membranes. Place rinds in the bowl with juice and set aside.

Step 2
Add one tablespoon of fruit juice to a tablespoon of honey and a tablespoon of olive oil. Whisk until combined. Add the fillets of arctic char and toss to coat. Let marinate for at least 5 minutes.

Step 3
Pour the remaining olive oil into the bowl with the citrus segments. Add the chives and a pinch of sea salt to taste. Stir to combine.

Step 4
Rub a suitable pan with neutral oil. Remove fillets from marinade, letting excess drip off—no need to pat dry. Discard excess marinade. Place the char fillets skin side down in the pan. Season the flesh with salt (and pepper, if you wish) to taste. Place in the top rack of the oven and cook for about 5 minutes or until roasted. Remove pan from oven and immediately transfer fillets to a serving platter. Spoon sauce over top. Serve extra sauce on the side.
